Juan De la cruz x el corte
The collaboration between El Corte and Juan de la Cruz Torales Villarreal is a celebration of true Argentine fire cooking, culture and identity. More than a guest chef partnership, this menu represents a shared commitment to authenticity bringing the spirit of the Argentine asado to Sydney with pride and integrity.
Born and raised in Argentina, Juan’s connection to food is deeply personal. A former contestant on MasterChef Australia, he won audiences over with his infectious energy and unwavering dedication to Latin American flavours. Growing up in a family of nine children, food was at the centre of everyday life. His mother taught him that cooking is about more than nourishment, it is about bringing people together while his father and uncle introduced him to the sacred ritual of asado: cooking over fire with patience, respect and simplicity. That philosophy now shapes this collaboration.
At the heart of El Corte x Juan de la Cruz is parrilla — traditional Argentine grill cooking done the way it’s meant to be. Fire leads the process. The cut is respected. Seasoning is simple. Flavour speaks for itself. From traditionally baked empanadas to flame-grilled entraña, every dish reflects how Argentina truly eats — not adapted, not fused, but proudly authentic.
Signature dishes like the Gran Parrillada recreate the energy of a shared asado, designed as the centrepiece of the table, while provoleta arrives bubbling and caramelised straight from the grill, capturing the theatre and soul of Argentine fire cooking. Even the choice of salsa served with each steak reflects a core belief: flavour is personal, and every guest should explore it in their own way.
This collaboration is about honouring heritage while creating connection.
It is Argentina on a plate — bold, generous and meant to be shared.
